At Rockpool Bar & Grill Vincent Martzloff brings Food & Beverage expertise from five-star hotels and leading steakhouses
At Rockpool Bar & Grill Vincent Martzloff is the Brand General Manager. He was born and raised in Versailles France and grew up on the Ivory Coast and in Morocco.
Vincent displayed a natural gift for hospitality, which was noted at a very young age.
When he was 16, and thinking about a career pathway, he was given a taste of working life at a 2 Michelin-starred restaurant in Paris called La Tour d’Argent.
Vincent’s teenage duties included vacuum cleaning and manning the lift. It was his first foray into the world of hospitality: “And I absolutely loved it,” Vincent laughs.
Hospitality Studies at Ferrandi
The ambitious young Frenchman went on to study at Ferrandi, a leading hospitality school in Paris, until the age of 18. While there, he completed a stage at the heritage-listed Palace Hotel de Crillon.
Vincent travelled to London to improve his English language skills after his gift for hospitality was noted by his tutor.
He travelled to London where he worked at the iconic five-star Savoy Hotel and Gordon Ramsay’s Savoy Grill. He mastered the art of attending to private dining rooms, as well as in-room dining during his 18 months there.
Vincent returned to Ferrandi to pursue a Bachelor of Hospitality Management.
Working at the World’s Best Hotels
Vincent worked at esteemed hotels during his studies, such as the 2 Michelin-starred Waldorf Astoria Versailles – Trianon Palace. He also spent time at the Four Seasons George V in Paris, where he continued to work after his graduation.
Vincent moved to Australia in 2007. He travelled around the country before settling down to work at the Wentworth Sofitel in Sydney as a Room Service Manager. There, he rose in rank to Restaurant and Room Service Manager within a short time. He worked at the hotel for two years.
His diverse hospitality career also includes several years at the Shangri-La Sydney, Japanese restaurant Koi in the Sydney suburb of Woolwich, and Milton Park in Bowral in the Southern Highlands.
Career Opportunities in Queensland
Next Vincent headed North where he worked for one of Brisbane’s best-known hospitality businesses, Gambaro Group. He worked on the post-opening of Black Hide Steakhouse where he collaborated alongside former Rockpool Bar & Grill Sous Chef Lukas McEwan for four years.
He then returned to Sydney and hotels, where he worked on the opening of Sofitel Sydney Darling Harbour. Vincent stayed there for two-and-a-half years. He was promoted to Food & Beverage Operations Manager where he oversaw seven outlets across the 590-room 5-star hotel.
Vincent rejoined Gambaro Group again when they opened another steakhouse, Black Hide by Gambaro at Treasury Brisbane and Italian restaurant Persone at Brisbane Quarter. He returned as General Manager for two and a half years.
A Career at Rockpool
Vincent joined Hunter St. Hospitality’s Rockpool Bar & Grill in September 2022. He is keen to implement his expertise in structuring work processes at larger scale groups.
He is based at the iconic Rockpool Bar & Grill Sydney but also works across restaurants in Melbourne and Perth.
“We have three amazing restaurants, with marvellous menus, and the best produce in Australia. This enables our Chefs to extract a fabulous amount of flavour from ingredients and create memorable dining experiences,” he says.
Vincent strives to “help our teams be continually inspired by gastronomy; to be curious about where our food comes from and to relate that to our customers.”
“We have sourced the best produce, we have had the best service, and have customers who keep coming back. We want to continue to be their favourite restaurant; a place where they feel comfortable and at home.”
